Eggbred, the fast-casual breakfast franchise founded by Chef Albert Shim, will open its Clovis restaurant Sept. 5, bringing the growing chain to a location near Willow and Nees avenues.

The company announced the grand opening in a news release Friday, confirming an opening date for the restaurant at 1127 N. Willow Ave., Suite 105. The Business Journal first reported in April that Eggbred was coming to the location, near Trader Joe’s, based on a lease report.

The grand opening is scheduled to begin at 7 a.m. Sept. 5.

What is Eggbred bringing to Clovis?

Eggbred is a fast-casual concept centered on breakfast and brunch dishes. Shim launched the first Eggbred restaurant in La Habra in 2020, and the company has grown to about 17 California locations.

Shim, Eggbred’s founder and CEO, has appeared on The Food Network and The Travel Channel. The restaurant serves traditional breakfast favorites reworked by the chef, including its “Scramble Me Softly” breakfast sandwich.

The company’s latest news release also highlights menu items including the chorizo egg & cheese breakfast burrito, Truffle Crunch Burger and mixed berry cheesecake waffle, along with coffee and cold-pressed juices. Eggbred says its dishes are made from scratch and prepared to order using locally sourced ingredients.

What is planned for opening day?

The first 50 customers at the Sept. 5 grand opening will receive a free breakfast sandwich or breakfast burrito from a selection of specified menu items, according to the company.

Customers will also be able to spin a prize wheel for additional giveaways.

How does Clovis fit into Eggbred’s expansion?

When the Business Journal reported on the planned Clovis restaurant in April, Eggbred had 17 locations across California, with additional restaurants planned in markets including Bakersfield, Brentwood and San Diego.

The Clovis opening now gives the company a confirmed launch date for its Central Valley expansion.

“We are thrilled to bring the EggBred experience to Clovis. Our commitment to serving delicious, high-quality breakfast and brunch options with a creative twist has been the driving force behind our success,” Shim said in the company’s announcement.

Shim said the company looks forward to becoming part of the Clovis community and providing a gathering place for customers.
