Fresno’s Fuego Mexican Kitchen among eight venues at the Madera property opening this fall

North Fork Mono Casino has revealed the eight dining venues that will operate at its Madera property when it opens in October, including a second location for Fresno’s Fuego Mexican Kitchen.

According to a news release, the lineup includes Manzanita Steakhouse, the property’s flagship restaurant, offering steaks and seafood and Clubhouse 99, a sports bar featuring 56 large-screen TVs and more than 20 local and imported beers on tap. The property will also feature four bars.

A Fresno favorite lands a second location

Located near the gaming floor, the food hall will house six dining concepts under one roof, according to the release. Among them is Fuego Mexican Kitchen, the family-owned Fresno restaurant established in January 2024, which will open a second location exclusive to the casino. The release said guests can order specialty items such as Prime Ribeye Tacos and Surf N’ Turf Tacos.

“My dad always lived by the saying, ‘Barriga llena, corazón contento’- a full belly makes for a happy heart,” said Javier Ramirez, of Fuego. “That philosophy is in everything we cook. Our family roots are in Michoacán, but our passion spans all of Mexico. We are thrilled to welcome North Fork Mono Casino guests to our table for an authentic, unforgettable meal.”

Six concepts fill the food hall

The other food hall concepts, according to the release, are Cafe Asia, serving Asian comfort food including pho, bánh mì and Vietnamese phin drip coffee; Chick Republic, offering chicken tenders, wings and sandwiches with classic and Korean-inspired flavors; Smash Stack Burger, serving smash burgers, fries, shakes and soft-serve ice cream; Pizza Fiore, offering Neapolitan and Sicilian-style pizzas, pastas and salads; and Kopiah, a coffee bar serving small batch-roasted coffee, baked goods, juices and breakfast items.

A $725 million bet on the Central Valley

The casino is set to open in October off Highway 99 in Madera, according a recent social media post. It is developed by the North Fork Rancheria of Mono Indians of California and managed by Station Casinos. The release described the project as a $725 million development creating more than 1,500 local jobs. The release said the property spans 264,000 square feet and will feature more than 2,400 slot machines, 40 table games, eight dining venues and four bars.
