A fast-growing charcuterie board franchise is opening in Clovis this March. A local husband-and-wife team will operate the new location, bringing customizable grazing boards to the city.

Graze Craze is a catering franchise that specializes in creating high quality charcuterie boards for celebrations and corporate events.

Typically made up of a variety of deli meats, cheeses, crackers, and fruits — both fresh and dried — charcuterie boards are a popular choice as they offer something for everyone.

In addition to its traditional fruit and deli platters, the company also offers charcuterie boxes and Cutie Cups — which are snack-sized portions of its ingredients served in handheld containers. The cups are marketed as healthier alternatives to traditional grab-and-go fast food.

Clovis’s new Graze Craze location will be owned and operated by Rachapol and Danette Lamee, who said that their shop has been in the works since May of 2025.

Rachapol, an entrepreneur and 20-year military veteran, has several years of leadership experience but cites Graze Craze as his first true brick-and-mortar venture.

“My professional background has always centered around leading teams, managing operations and building organizations, so stepping into this role feels like a natural extension of that experience,” he said.

Though the two have different professional backgrounds, Rachapol said that Graze Craze — the couple’s first joint work-related project — has been an incredible experience because their strengths naturally complement each other. 

“I focus on the strategy, business model, and long‑term direction of the business,” he said, “while Danette leads operations and customer service, where her warm personality and people‑first approach truly shine.”

Clovis residents themselves — the Lamees say that they were drawn to Graze Craze because of its quality, consistency and creativity. The couple chose to open their first brick-and-mortar business in the city where they raised their children and know their neighbors.

“Bringing this concept to a community we’re deeply connected to made perfect sense,” said Rachapol.

Lamee described the steps he took to become a Graze Craze franchise holder. 

“The process includes qualification interviews, discovery meetings with the franchisor, financial vetting and extensive hands-on and virtual training.”

Once approved, franchisees select their site and design, organize construction and train their teams. The process is structured to guide new owners toward a successful launch, he said.

The Valley’s latest Graze Craze location is coming to 255 N. Clovis Ave. in Clovis’s Outpost Shopping Center, between Tan Republic and the now closed Dough Boys Pizzeria. The Lamees plan to open their doors the first week of March.
