On a Roll Sushi Mexican Japanese Bar located in Downtown Fresno celebrated its soft opening Thursday following an ownership change to Itati Lopez, who has more than 12 million followers on TikTok and over two million followers on Instagram.

According to Lopez’s Instagram page, the grand opening will be on Nov. 21.

Under Lopez, who was born in Bakersfield, the newly expanded On a Roll will offer customers a modernized look with a new television and a newly installed bar for sports fans. The menu will also add a new Mexican-style roll called Roll Sinaloa. 

“We want customers to be able to watch soccer games, or just come to sit down and eat,” Lopez said in a recent Instagram video.

 

The menu will have Mexican sushi rolls, as well as traditional Japanese sushi rolls.

Lopez said she is excited to open up her very first restaurant. 

The restaurant also has a new logo, according to the website’s Facebook account.

On a Roll was closed for over a month prior to the soft opening. Chef Rosa Guillen, who has 20-plus years of experience making Japanese cuisine, was enthusiastic about returning.

“We’re very excited to come back to the community and re-open again,” Guillen said. 

On a Roll is currently hiring new bartenders, sushi chefs and servers before the grand opening next Thursday. 

It was back in 2018 when Mezcal Lounge owner Ricardo Flores replaced its taqueria with a sushi restaurant called On A Roll Sushi.
