Gut-Friendly Wellness leads the pack, with high-protein, compact portions responding to shifting eating habits influenced by weight loss medications. Expect fermented proteins, collagen-infused formats, and fiber-forward blends designed to satiate in smaller servings while delivering steady energy.
Textural Maximalism promises sensory drama on every plate. Forget simple smooth or crunchy—2026 is all about layered experiences pairing creamy with crispy, chewy with crackly, and smooth with aerated foams. Think cold foams, crunchy inclusions and finishing elements that create visual and tactile excitement.
Unconventional Flavor embraces boundary-pushing combinations as younger consumers seek adventurous eating. Savory-sweet pairings, edible blooms and unexpected umami notes will create conversation-starting dishes drawing from global palettes and cultural inspiration.

Breakfast/Lunch Mashup expanded brunch’s appeal as a relaxed, socially-focused meal stretching into early afternoon, accommodating increasingly complex work and family schedules.
Iced Beverage Explosion made cold drinks a year-round phenomenon, with global cuisines and tropical fruits driving flavor innovation in iced coffees, lemonades, and refreshers.
Blue For You predicted naturally-colored blue foods and drinks from butterfly pea flower, blue spirulina, and huito would proliferate as consumers sought aesthetic appeal and superfood associations.
Time for Turmeric forecast continued popularity for the bright yellow-orange spice in golden milk lattes, smoothies, and curries as consumers pursued functional benefits and global flavors.
